Andrew eats a diet consisting of mostly gluten free/dairy free foods. When he goes somewhere with friends or when were out he does eat whatever he wants now. I do notice a slight change in him but its not a big deal. When he was younger we were very strict and stuck to the gluten free/dairy free foods. We buy mostly organic foods from our local Food Coop. I have found that if I do all my shopping there and watch the monthly specials, we really don't spend any more then what we would at a regular grocery store.

This is my favorite bread recipe. I took a gluten free recipe and substituted a few ingredients. It is a heavier bread that is loaded with protein, fiber, and omega's. I do not know the exact calories nor can I give you the nutritional value because I put my own ingredients in. When it is done it looks a little like banana bread both in color and texture. It is great for a sandwiches or with a little honey on it for a treat.
1 cup soy milk
1 cup warm water
1 tsp. apple cider vinegar
5 TBL olive oil
2 eggs, lightly beaten
1/3 c organic raw sugar or honey
1 1/4 cups brown rice flour
1 1/4 cups garbonzo bean flour
2 cups freshly ground flax seeds
3 tsp. Xanthan gum
1 1/2 tsp. sea salt
1 TBL yeast
Preheat oven to 350.
In a large bowl combine wet ingredients and mix. Then add the dry ingredients and mix with a big spoon. Batter will be thick.
Scrape into a bread loaf pan. I use an over sized pan. You could use two regular sized bread pans.
Let it rise, then bake for 50 - 60 minutes. It will be dark like banana bread. Then scrape the sides and transfer it to a wire rack.
